Our Iberico Shoulder Roast comes from heritage Spanish pigs raised to roam and root freely. They graze across pasture and woodland at Iberico Acres.
Their diet includes natural forage and a clean blend of barley, oats, alfalfa, and sorghum. When available, we finish them on acorns.
This shoulder features rich marbling and deep, buttery fat. As it cooks, the fat melts slowly into the meat.
