Iberico Acres raises a small number of animals each year. We don’t run a standing inventory — when a harvest window opens, members are notified first.
Each share comes from a verified Iberico pig raised on rotational pasture at our Hartford, Alabama farm. Animals are processed on-site by a USDA-inspected mobile unit in a low-stress, familiar environment — a detail that matters as much to the flavor as it does to the animal.
Whole hog and half hog shares are available to members on a seasonal basis. Specialty cuts and limited chef reserve allocations are released separately.
Current members will receive harvest notifications by email before any public release.

Live animals are available for on-farm pickup at Iberico Acres, or we can arrange transport to your location depending on distance and current availability. Contact us directly to discuss logistics — we handle each live animal placement individually to ensure the animals travel safely and arrive in good condition.
Yes. Members and buyers are welcome to visit the farm and select from our available animals directly. We encourage this — seeing how our pigs are raised and choosing your own animal is exactly the kind of direct farm relationship we’re built around.
Our Iberico pork is harvested and vacuum-sealed at peak condition, then flash-frozen immediately to lock in the marbling, flavor, and texture that makes this breed exceptional. This is the same approach used by the world’s finest heritage meat programs — preservation, not compromise. We recommend keeping it frozen until 24–48 hours before you’re ready to cook.
All pork products are shipped overnight, vacuum-sealed and packed with dry ice or freezer packs to maintain temperature throughout transit. Upon arrival, transfer to your freezer immediately to preserve the integrity of the meat. If you have any concerns about your shipment on arrival, contact us before unpacking.
